Summer is upon us and it’s time to whip out the popsicle recipes! I’ve always loved making popsicles and ever since we bought the Zoku Quick Pop Maker (Amazon affiliate link), I’ve been making them more often. Made too much fruit smoothie? Pour it in the Zoku! Have leftover coffee? In the Zoku it goes! Since the machine is so small, we always put it back into the freezer after it’s been washed. This way we can make popsicles all the time.
Lately I’ve been having coconuts on my mind. You know Summer = coconuts! Makes sense to me…lol. Well if you have coconuts on your mind and love matcha, you’ll love my Coconut Matcha Popsicles! These pops are vegan, low calorie (only 36 calories each), low carb, and they even give you a little caffeine kick.
Ingredients: 2 TBSP Two Hills Tea Matcha Coconut Latte, 2 TBSP Trader Joe’s Turbinado Raw Cane Sugar, 1 TBSP Let’s Do Organic Shredded Coconut (Amazon affiliate link), and 1 3/4 cups of So Delicious Unsweetened Organic Coconut Milk.
If you love the taste of matcha and obsessed with milk teas like I am, then you’ll love my Honey Almond Matcha Milk Tea recipe (phew! that’s a long name). I always order milk teas when I go to Chinese cafes, but I really hate that they use non-dairy creamer and powdered flavors in their drinks. I know that that’s the traditional Taiwanese Milk Tea recipe, but it’s just not very healthy. But let’s be honest, when I’m at a cafe I’ll still order it (lol), but I prefer to make healthier versions at home. It’s all about a balance right? :D
You need 1 teaspoon of honey (the latte mix is sweetened, but free to add more), 3 tablespoons of heavy cream (you can substitute with any other types of milk you’d like. I prefer the richness of heavy cream for this drink because it just adds a good mouthfeel and pairs well with these strong flavors), 2 bags of PG tips black tea (Amazon affiliate link), and of course 1 tablespoon of Two Hills Tea Almond Matcha Latte Mix. I love to drink tea. I have 2 cabinets at home dedicated to teas and I drink them all day. I’d often have Irish breakfast tea in the morning, genmaicha for lunch, a strong chai in the afternoon, then rooibos or peppermint tea before bed. The right kind of tea can be satisfying, go with every meal, provide energy, or help me relax. I love it when my friends come over and we have an impromptu tea party.
